Ingredients for 4:
- 4 large potatoes
- grated Parmesan cheese to taste oil
- for frying
- parsley salt to taste 6 eggs

Wash, peel and cut potatoes into cubes
later in a shallow dish prepared with chopped eggs and add the Parmesan
, salt and chopped parsley.
Put the 'oil' to heat oil in a frying pan and pour slowly
the potatoes cut into small pieces.
Cook the potatoes until golden brown and help yourself with a wooden spoon so that they can attack the surface of the pan.
Cool the potatoes into cubes cooked for about 5 minutes;
then add the beaten eggs carefully so as to cover all the potatoes and cook for 5 minutes, the omelette.
Before serving the fried potatoes swabbed the 'excess oil with paper towels; and behold, your meal is ready!
